Considering the growth, interest and new preferences of the everyday consumer, there is an opportunity to enhance the local industry, inspired by the European model of Protected Origin Designations and its replication, particularly in small dairies and goat cheese manufacturing communities in the Coquimbo and Valparaiso regions. The Protected Origin Designation model allows the participation of small and medium dairy and artisan cheese-maker cooperatives, as well as the potential for unique and added-value products in a sustainable manner, preserving the quality and traditions that are part of the cultural heritage, while also promoting the tourism industry.
