This article discusses the strong and colonial presidios of Valdivia (Chile) y Ledesma (Argentina), as enclaves socio-political and niche markets, focusing on the food supply, through two mechanisms of support: the annual contracts of provision for Valdivia and tax fiscal (Sisak) for Ledesma. For this, we describe the social relations of production within the framework of sustainability of the forts, including the providers (assientists and landowners), and those who consumed (soldiers).
