The objective of this work, was the development of crackers with non-conventional ingredients such as lactoserum and soy in order to obtain better nutritional quality. The crackers were formulated based on a chemical computation, with lysine as the limiting amino acid. Macrocomponents and minerals were determined, and the acceptability of the crackers was evaluated by a group of pre-school children. The protein quality was evaluated by the Relative Net Protein Ratio method. The results showed that the crackers could provide 13% of total calories and 25% of the protein requirement of pre-school children. The product is recommendable as a mineral supplement among persons with high nutritional requirements.
